Ingredients

  • 1 cup of cottage cheese

  • 5 eggs

  • 1/2 bundle of spinach

  • 1 red bell pepper

  • 1 onion

  • 1 garlic clove

  • 3/4 cup of grated cheddar cheese

  • 1/4 cup of crumbled feta cheese

  • 1/2 tsp of salt

  • 1/4 tsp of paprika powder

  • 1/4 tsp of turmeric

  • 6 oz bacon (optional)

  • 1 pie crust (optional)

Directions

  • Fry the bacon in a pan until crispy. Let it cool down on a plate and then cut it into fine chunks..
  • Chop the onion and red pepper & mince the garlic. Heat up a frying pan (medium), melt the butter and add the onion, pepper and minced garlic.
    Add half of the salt and pepper for taste. Let simmer on medium heat for about 10 minutes.
  • Chop the spinach and add to the vegetable mix. Let it cook together for about 2 minutes (or until the spinach has reduced). Then remove the pan from the heat and let it cool down.
  • In a mixing bowl, add the eggs and whisk them. Then add the remaining spices, cottage cheese, ΒΌ cup of cheddar cheese, feta cheese, bacon and vegetable mixture. Mix together using a spoon.
  • In a pie pan or pie dish, add the pie crust at the bottom. If you don’t use a pie crust, ideally use baking paper on the bottom so that you can easily remove the quiche at the end. Then add the mixture and sprinkle the remaining cheddar cheese on top (evenly distributed).
  • Put in the oven at 350 degrees for about 30-45 minutes (the quiche is ready when the edges of the quiche are fully set and the center jiggles slightly).
  • Let it stand for 15 minutes before serving.

Notes

  • The cooking time may vary on the strength of your oven. If you feel the center is not firm enough, then continue to cook. In the ideal state you get a nice golden-brown crust like in the picture above.
  • You can swap out ingredients and add different vegetables to this and make it your own! We have tried variations with mushrooms, ham, leeks… All great for a Sunday brunch.
