Ingredients

  • 1 pound 1 Boneless chicken breast (cut up in small cubes)

  • 2 cups 2 Broccoli (wash and cut in small pieces)

  • 1 can 1 Coconut milk (can be reduced fat if you want, but the sauce will be thinner)

  • 1 1 Onion (chopped)

  • 2 cloves 2 garlic (minced)

  • 2 tablespoons 2 Olive oil

  • 1 teaspoon 1 Salt

  • 2 teaspoons 2 Curry powder

  • 1/2 teaspoon 1/2 Turmeric

  • 1/2 teaspoon 1/2 Paprika

  • 1/4 teaspoon 1/4 Black pepper

  • 1/2 Cup 1/2 Chicken broth/stock

Directions

  • Heat up half the olive oil in a pan or pot and add the onions. Cook for about five minutes until glazed.
  • Add the broccoli and garlic as well as half the spices. Cook for another five minutes. Then remove the vegetable mix from the pan and set aside.
  • Mix the remaining spices with the chicken. Add the remaining olive oil to the pan and fry the chicken until cooked.
  • Add the vegetables back to the pan with the chicken and add the coconut milk and chicken stock. Let simmer on low heat for about 20 minutes (you can do longer as it will seal in the flavors).
  • Serve with rice. Enjoy!

Notes

  • It’s important to add the spices to the chicken before frying. It ensures the flavor of the spices mixes with the food rather than just the sauce.
  • You can add a variety of vegetables to this dish. I have tried with mushrooms, red bell peppers, spinach… All work well and create a nice variation to the plate.
  • Feel free to modify the spices. Some like it with more curry, others with less.
  • This dish is perfect if you want to eat anti-inflammatory food!
