Simple but delicious crepes

Making crepes is quick and easy! The only two things you must remember is to get the consistency of the mixture right and play around with the heat of the pan so that the pancakes don’t go too crispy but aren’t too light either. Otherwise, all you need is flour, eggs, milk, sugar, vanilla essence and butter. Let’s cook!

Ingredients

  • 2 cups 2 flour (self-rising is ideal, but normal flour will do)

  • 2&1/2 cups 2&1/2 milk

  • 3 3 eggs

  • 5 tablespoons 5 powdered sugar

  • 1 tablespoon 1 vanilla essence

  • 2 tablespoons 2 butter

Directions

  • Sift the flour and sugar into a large mixing bowl.
  • Make a little pit in the middle, add the eggs, and whisk it all together until smooth.
  • Slowly add half the milk and whisk or blend until smooth. Add the vanilla essence and the remaining milk, and again blend or whisk until smooth.
  • Let the mixture sit on the counter for about 20 minutes to settle..
  • Heat up a pan (medium heat) and add a bit of butter. Wipe the butter clean with a paper towel (keep this paper towel on hand).
  • Use about 1/4 cup of mixture for each pancake. The pancake is ready to be turned around when the top is dry, and you can see bubbles. Turn it around and let it cook for another minute.
  • For each pancake I like to put a slight bit of butter on the paper towel and quickly wipe the pan to grease it before adding the mixture.
  • If you feel pancakes are too thick, add a bit of water or milk to the mixture.

Notes

  • Some people like to add some melted butter to the mixture (2 tablespoons). Feel free to try this out.
  • You can make sweet or savory pancakes. Remove the vanilla and sugar for savory pancakes. You can serve these with bacon, goat cheese, eggs…
