Ingredients
2 heads 2 of broccoli
1 16oz 1 box of mushrooms (I prefer cremini or shiitake, but any standard white mushrooms will work)
1 1 white onion
2 cloves 2 of garlic (minced)
1 tablespoon 1 balsamic vinegar
2 tablespoons 2 Worcestershire sauce
3 tablespoons 3 olive oil
1/2 cup 1/2 beef bouillon
1 teaspoon 1 salt
1/2 teaspoon 1/2 paprika
1/2 teaspoon 1/2 turmeric
1/4 teaspoon 1/4 black pepper
1/2 teaspoon 1/2 onion powder
1/2 teaspoon 1/2 curry powder (this one is optional, feel free to leave it out depending on what you’re serving it with)
1/4 teaspoon 1/4 thyme
1/4 teaspoon 1/4 dried rosemary
Directions
- Clean & cut the mushrooms. Make sure any remaining dirt is removed. I like to cut the mushrooms into small pieces, but this is a preference.
- In a frying pan, add one tablespoon of olive oil and the mushrooms. Leave on medium heat for a few minutes before adding a quarter of all the spices. Also add the balsamic vinegar, one tablespoon of Worcestershire sauce and 1/4 cup of beef bouillon. The mushrooms will caramelize over the next 10-15 minutes. Leave them on until all the moisture is gone.
- Chop the onion (again, I like small pieces, but you can do this as you please). Add the butter to a frying pan and add the onion. On medium heat let this go until the onion is caramelized (10-15 minutes).
- Chop the broccoli and add it to the onion together with all the remaining ingredients (beef bouillon, spices, garlic). Let it cook with a lid on for about 5 minutes.
- Take the lid off and add the mushrooms to the mixture. Let this further cook for another 5-10 minutes (stir regularly so the flavors mix).

Notes
- We like to cut all the vegetables relatively small. However, some people like bigger chunks. Do this as you please.
- We had this with chicken cacciatore, but this side goes with basically anything.
- You can add red bell peppers, spinach and other vegetables as you see fit.
